Recipe: spicy tomato and lentil soup

This soup is delicious, chunky, filling, and super healthy. I like to have a batch of it in the fridge for when i’m stuck on what healthy meal to make, or when i just want a quick healthy snack. The recipe is so simple, and you can modify it how you want. Add in whatever veg you like (i sometimes add a red bell pepper), or add beans for more protein. I like it spicy but you can take away the chili or add extra to your taste.
Ingredients
- An onion
- 2 cloves garlic
- 2 carrots
- 2 sticks celery
- one red chili
- 2 tsp olive oil
- small mug of red lentils
- can/carton chopped tomatoes
- 2 tsp low-sodium vegetable stock powder
- paprika
How to make it
- heat oil in large pan
- finely chop onion and celery and add to pan
- peel and finely chop carrots and add to the pan
- keep stirring!
- de-seed and finely chop chili, finely chop garlic and add to the pan
- when all the veg are smelling good and looking slightly browned, tip in the chopped tomatoes, a couple of cups of water, the stock powder and paprika.
- stir and bring to a simmer then add the lentils. They should take about 15 mins to cook, season to taste, then your soup is ready!
Its filling enough to eat alone, but if you want something to dunk in it, crusty wholemeal bread or crispbread is great.
